Redcurrant Fool

Making the most of the seasonal redcurrants that had arrived recently, they won’t be in season all that long so this is definitely worth making soon.

Ingredients:

  • 284ml Double Cream
  • 2 Tbsp of Runny Honey
  • 100g Redcurrants – Stalks Removed

A simple recipe this one, but well worth the effort for a summer seasonal treat. 

Place the redcurrants in a saucepan with the honey. Heat gently until the redcurrants start to break down. Remove from the heat and allow to cool.

Whisk the cream until it forms soft peaks.

Fold three quarters of the redcurrants into the whipped cream. Chill in the fridge for 10 minutes then serve the rest of the redcurrants on top and enjoy!
