A cut above the rest

At Suffolk Food Hall, the Butchery is where our farming roots are most proudly on display. Our own herd of Red Poll cattle – a native Suffolk breed, chosen for their exceptional flavour – can frequently be seen grazing our paddocks. Every cut of beef is hung for a minimum of 28 days, allowing the rich flavour and marbling to develop fully. When demand exceeds what our own herd can provide, we turn to our trusted local farmers, working with traditional breeds including Lincoln Red, Aberdeen Angus and Longhorn.
Our pork comes from Chris Schwier, who runs a small, dedicated family farm just over the Norfolk border. His outdoor-reared Large White Duroc cross pigs are raised with the utmost care and finished in strawed barns for consistency, resulting in pork of exceptional quality. It’s a relationship built on trust and shared values and you can taste the difference in every cut.
For those who love game, our own Broxtead Estate provides the vast majority of what you’ll find on our counter. The Estate sits within an Area of Outstanding Natural Beauty, where conservation is taken seriously: no pesticides or fertilisers are used in the woodland or rough ground, allowing wild herbs and grasses to flourish and giving our game a wonderfully varied and natural diet. Our wild fallow venison is hung for a full week, producing lean, beautifully textured meat with a rich depth of flavour. Seasonally, pheasant and partridge from the Estate’s small private shoot are also available.
When it comes to poultry, the SFH team is proud to work with Hog & Hen in Stonham Aspal, where free-range, slow-matured birds are finished entirely by hand on the farm. For those who prefer a slightly smaller bird, Sutton Hoo in Woodbridge offers an excellent alternative, reared with the same commitment to space, fresh air and time to mature.
Our lamb is sourced with the same care and consideration as everything else in our Butchery. We work with a trusted network of smaller family farms across Suffolk and Norfolk, selecting only flocks that meet our exacting standards for animal welfare and quality. Lambs are reared naturally, with plenty of time on grass, resulting in tender, succulent meat with a flavour that speaks for itself. Named farms in our trusted network include Bull Farm in Felthorpe, Green Farm in Little Barningham, Woodlands Farm in Bracon Ash, Bowse Farm in Saham Toney and Pear Tree Farm in Erpingham.
