Tradition in every cut 

Our beef begins close to home with our own herd of Red Poll cattle – a native Suffolk breed selected for its exceptional flavour and well-balanced marbling. Often seen grazing the paddocks surrounding the Food Hall, they form the heart of our Butchery, with every cut carefully prepared and hung for a minimum of 28 days to develop depth, tenderness and richness of flavour.

When additional supply is needed, we source from a small group of local farmers known for the quality of their produce and their exacting standards. Together they provide traditional British breeds such as Lincoln Red, Aberdeen Angus and Longhorn, ensuring the same consistency and flavour across every cut we offer.
